Chef Johnny Earles is one of the area's most innovative and
enthusiastic chefs. He is the Chef/Owner of the Famous Criolla's
Restaurant in Grayton Beach which he opened after moving from the
Paradise Café, also in Grayton Beach, where he was also the
Chef/Owner. Chef Earles is very generous with his time and talent
serving as mentor for our students in externship and as contributing
Chef for the James Beard House Foundation.
Chef Earles spends months each year traveling the world to work with
the some world's leading chefs in the world's leading restaurant
kitchens. He is know extensively for his innovation in Caribbean
cuisine, repeatedly winning the Florida Trend's Golden Spoon award each
year and for recognition from Wine Spectator for earning the Award of
Excellence.
