Professeur Gil Galasso Gil Galasso, Professeur de Restaurants, is our faculty representative in our sister college, the Lycée d'Hôtelier et de Tourisme in Biarritz, France. Although professeur Galasso is seven hours away across the Atlantic Ocean, he still joins us on the GCCC campus once a week via his PicTel interactive classes in Restaurant Management and The French Mâitre d'. Professeur Galasso competed in the national culinary competitions in France in 2001 and achieved the title of the number one Master Mâitre 'dHôtel in all of France for that year. He is the only certified educator to ever have achieved the national title. His classes at GCCC include tableside preparations of flambéed dishes, wine service and carving techniques, that include everything from Chateaubriand and whole duckling, to fresh fruits for dessert and for cheese service. |
